Consider growing your own pumpkins like I did in my suburban garden.
Ingredients
1.5 kilo of pumpkin pieces no skin
2-3 medium size carrots peeled and roughly chopped
1-2 cloves of garlic crushed or chopped
1 medium onion finely chopped
1-2 teaspoon of nutmeg
1 -2 teaspoon of cinnamon
1 chicken stock cube (I used Massel's Stock Powder)
250 grams cream or coconut cream
5o millilitres of oil
I litre hot water
Instructions
In a large frying pan heat oil and roast pumpkin on medium heat. The caramelisation of the pumpkin adds flavour to soup.
Add onion and garlic. Cook for a few minutes on medium heat.
Crush stock cube into pan and add one litre of hot or boiling water.
Add carrots.
Bring to boil place lid on frying pan and boil for 5 minutes.
Reduce heat to a simmer, cook until carrot and pumpkin are tender.
Add nutmeg and cinnamon.
Turn heat off and blend with a stick blender or put soup into a blender. Reheat if needed. Serve in bowl with cream, about 40 millilitres (2 tablespoons) a bowl.
